So you’ve still got all this chocolate left over from Easter…debatable BUT if you do, and you can’t quite eat anymore, why not bang that choc into a dozen odd buttery homemade cookies?
We had quite a lot of Kinder Mini Eggs and Smartie Mini Eggs left over, and I quite fancied a mash up of the two in some cookies. The best thing about making cookies is that you can find all the ingredients in your cupboard/fridge and they’re pretty bloody quick and easy to make.
For these you’ll need;
- Any type of chocolate you have/want
- 175g butter at room temp (I use Stalk butter)
- 200g caster sugar
- 1 medium egg
- 275g self-raising flour
- tsp of vanilla extract
(Makes 12/13 big beautiful cookies)
Bang the butter and sugar together until nice and creamy, then add the egg and vanilla, mix until a nice smooth consistency. Once that’s done, add the flour, no need to sift (unless you have extremely clumpy flour…) you should be left with a wettish sticky dough. Then add the chocolate, add however much you like.
Line however many baking trays you desire with parchment paper and dollop on the dough. I used a ice-cream scoop to get an even(ish) amount of mix for each cookie. I got 12 out of this, but bare in mind they stretch out as they bake, so I got 4 cookies on a standard rectangle baking tray (30cmx21cm).
Pop them in the oven (200°C fan oven/180°C non-fan) for about 10 minutes, you’ll see the edges will be golden but will still be really wobbly when they come out, but don’t fret, they’ll harden as they cool. I left mine for 20 mins, albeit through pain and hunger, but the longer you wait, the better they’ll be!
